Banana Muffins




1/4 cup shortening
1 cup sugar
1 egg
1 1/2 cups mashed ripe bananas (about 3 large)
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt

Cream shortening and sugar. Add egg; beat well. Add bananas and vanilla; ix well. Combine flour, baking soda and salt; add to creamed mixture.

Fill paper-lined muffin cups. Bake 350 degrees for approximately 20 minutes. Enjoy!
